Country Chicken
(for 20)
1 tin roaster from store ( for turkey)
1 bag of frozen chicken breast
1 Large (very) can of chicken soup
2 “ “ cans of Mushroom soup
3 pkg of wild rice ( Uncle Ben’s or
3 cans of 30oz. String green Beans (largest cans)
Curry powder
Corn flakes
Butter
Mayonnaise (2 cups)
Boil chicken breast..cool and cut into chunks about 2- 3”
Cook rice at same time
Spread rice in bottom of tin roaster and cover w/ 3 cans of cold green beans
Place chicken on top
Combine all soup, mayonnaise and 2 – 3 tablespoons of curry (to taste) and spread on top of casserole. Top with corn flakes (loosely) and drizzle butter.
Can be made day before …bake 350 for 1 – 1.5 hours.checking when bubbly.
Actually you need like 2.5 cans of the soups w/ mayonnaise , so I buy 3
